1/2 c. skim milk
1 mashed ripe banana
8 grated baby carrots
1 c. grated zucchini
1/4 c. sunflower seeds
1/2 c. thawed or fresh blueberries

Here is how you make Energy Muffins:

Combine dry ingredients (flour, egg white protein powder, baking powder, baking soda, cinnamon, nutmeg) in bowl. Combine wet ingredients (apple sauce, maple syrup, egg, milk, banana) and then add to dry ingredients gradually. Stir in zucchini, carrots, sunflower seeds, and blueberries.Spoon into greased muffin tins, filing them about 2/3 full. Bake at 325 degrees for 25-30 minutes. Makes 42 mini muffins or 12-14 regular size ones. They can be frozen.Number of Servings: 14
