1 cup oatmeal, old fashioned or 1 minute
1/4 cup brown sugar
1/4 cup regular Splenda
1 tablespoon baking powder
1/2 cup mixed berries or blueberries, frozen
1 cup non fat milk
1/4 cup Enova oil
1 large egg, lightly beaten
1 teaspoon vanilla



How Do I Make Super Belly-Flattening Muffins?

Here is how you make Super Belly-Flattening Muffins:

Heat oven to 400 degrees. Mist muffin tin with cooking spray or use paper muffin cups. In a large bowl, mix flour, oatmeal, brown sugar and Splenda, baking powder. In a small bowl, blend milk, oil, egg and vanilla. Add to dry ingredients along with frozen mixed berries. Stir until just moistened. Fill 12 muffin cups almost full and bake at 400 degrees for 18-20 minutes. Cool on wire rack for 5 minutes, then remove from pan. Store in a covered container and watch them disappear. * For variety, sometimes I substitute 1/2 cup raisins and add 1/4 cup baking cocoa for a chocolate muffin. This adds about another 15 calories for a total of 166 each. Makes 12 servings. They also freeze well and just microwave for a few seconds.
