Spray muffin pan with nonstick spray or fill with liners. Beat egg. Add sugar and beat until sugar is incorporated. Repeat with oil, then yogurt. Set aside. In another bowl, mix wheat bran, wheat germ, flour, salt, and baking soda as thoroughly as possible. Break up any lumps of baking soda or flour. I find it's easiest to do this step with my hands. Pour the dry on top of the wet. Stir ten times. The Good Eats episode The Muffin Man shows the correct technique. Basically, get the dry mostly mixed into the wet, but don't worry about getting it even. There may be lumps of dry or smears of wet. Don't worry about it. Just don't over-mix!Add 2/3rds of the blueberries. Stir three to five more times. Scoop mixture into muffin tin (I used my hands for this part, as well, but Alton Brown uses an ice cream scoop, which seems to work well for him). Sprinkle remaining blueberries over the top and press down lightly.Place pan in oven and increase temperature to 400 degrees F. Bake 20-25 minutes, rotating halfway through.Makes six muffins.Number of Servings: 6Recipe submitted by SparkPeople user BINJALI.What's The Nutritional Info For Binjali's Blueberry Muffins 1?The nutritional information for Binjali's Blueberry Muffins 1 is:
