3/4 cup sugar (I use coconut sugar)
1.5 tsp vanilla extract
1 1/2 cups fresh blueberries
1 egg
1 cup Greek yogurt

Here is how you make Gluten Free Blueberry Avocado Muffins:

Preheat oven to 375 degrees F. Line a muffin tin with 12 paper liners or spray with coconut oilIn a medium bowl, sift together the 3 types of flour, baking powder, baking soda, salt and cinnamon (optional). Using an electric mixer and a separate bowl, or food processor, add avocado and mix on medium speed until smooth. Add sugar, and mix until blended. Add egg, and continue beating until completely combined. Mix in vanilla and yogurt until just combined. Slowly add the flour mixture into the batter until just combined. Gently fold in blueberries. Spoon batter into prepared muffin cups. Bake for 25-30 minutes, or until a toothpick comes out clean. They tend to need a bit longer than you think because they are very moist. Cool for 5 minutes before removing.Serving Size:?makes 12 muffins
