Preheat oven to 375 degrees. Lightly grease muffin pans or use liners. In a medium bowl, whisk together the flour, salt, baking soda, and cinnamon. Set aside. In a large bowl, stir together starter, oil, water, egg, brown sugar and 1/ 2 tsp. of lemon zest. Add the flour mixture a little at a time until just combined, do not overmix.
