Preheat oven to 350 degrees. Beat eggs with whisk. Add oil, applesauce, sugar, and Splenda, and mix well. Next, add zucchini and vanilla and mix well. Mix remaining dry ingredients in separate bowl and then add to wet mix. Last, mix in nuts/fruit, if desired. Pour into paper-lined muffin pans, or spray them with nonstick spray. Cook at 350 degrees for 20-25 minutes, or if making loaves, bake for 1 hour to 70 minutes.
