Finely dice the bell pepper, onion and garlic clove. Spray skillet with olive oil and saut? vegetables until tender. Chop the spinach. Blend eggs and cajun seasoning in a blender or magic bullet until frothy. Spray a 12 tin muffin tin with non-stick spray. Evenly distribute the spinach, saut?ed veggies and cheese into each tin. Pour over the egg mixture; fill each cup 2/3 full. Bake in a 350 degree oven for 11 - 12 minutes or until the eggs feel firm.
