Preheat oven 350, pan spray or line 12 muffin cups. In large bowl mix together dry.Add carrots, pear, cranberries, nuts, and coconut to dry ingredients. Mix to coat.In small bowl whisk together egg whites, and egg . Add in applesauce, sugar, and orange zest & juice and stir.Add liquid to dry/fruit mixture and stir til just moistened. Scoop into muffin pan.Set pan in middle of oven and bake 20 mins, check doneness with toothpick.
