Combine first four ingredients in a large bowl.Whisk together next four ingredients in a small bowl.Fold carrots into small bowl, and stir contents of small bowl into large bowl.Gently fold in raisins.Made 9 muffins for me. Cook 12-13 minutes. Cool 10 minutes in the pan, then on a wire rack.(*I used muffin cups so I wouldn't have to use oil or butter to grease.
