1/4 cup clean eating approved butter, melted (brummel calculated)
1/4 cup water [optional]
6 uncured turkey bacon, fully cooked (Jennie-O EL ca;culared)
3 large eggs, whisked
1/4 cup cheese (Sargento RF Cheddar Cheese calculated)

Here is how you make Emily Eats Clean's Bacon, Egg, and Cheese Muffins:

Preheat oven to 400F. Grease cupcake pan. Cook bacon.Combine first 4 ingredients (flour, agave, sea salt, & baking powder) together in a medium-sized mixing bowl and mix well.Whisk egg whites, milk, and melted butter together in a separate, small-sized mixing bowl.Form a well in mixing bowl 1 and pour bowl 2??s contents into well. Mix together. Batter will be lumpy, that?fs okay. If you feel batter is too think, add in water.Cover the bottom of 6 greased cupcake molds with a spoonful of batter. Roll bacon into a circle and place in batter. Pour whisked eggs into center of bacon.Spoonful remaining batter on top and around bacon. It?fs okay if it doesn?ft cover bacon completely, it will spread as its cooking. Divide the 1/4 cup cheese on top of your 6 muffins.Bake on center oven rack at 400F for 25 minutes.Note: I used cupcake papers, but they were difficult to get off when cheese was melted to them.
