Here is how you make Orange Pineapple Coconut Muffins:

Mix together all dry ingredients including coconut. Drain mandarin oranges, pulverize in blender/food processor, it will be very liquid. Drain pineapple and mash leaving smallish pieces. Add fruit, oil and egg to dry ingredients. Stir thoroughly. Bake in muffin tins, sprayed or with papers, at 400 degrees for 20 minutes or until golden brown. Serving Size: Makes 12 large muffins.
