1) Preheat your oven to 350*F and grease your regular size muffin tins (you can probably use cupcake liners instead). Haven't figured out how to get this recipe down to just 12 muffins... so you're stuck with either greasing 3 cups in a second muffin tray or putting a second mini-batch in after the first have come out.2) Sift all of your dry ingredients together in a medium bowl & set aside.3) In a large bowl, wisk your egg and then add all of the rest of the ingredients togerher well accept raisins.4) Add the Dry ingredients to the wet and mix together with a spatula, scraping the sides and bottom of your bwol, just until combined. I hate it when recipes say "don't over mix"... rather, only mix until you don't have any big clumps of dry ingredients remaining.5) Fold in the raisins. I dump them all into the middle of the batter at once, and then using my spatula just fold the batter from the sides over the raisins until they're distributed.6) Fill your muffin cups up to almost the brim - you should only have about half a centimeter to go before the muffins overflow. 7) Pop the pans into your preheated oven for 20 minutes. Check to make sure that they're done by inserting a dry toothpick into the middle of a couple of your muffins. If it comes out clean (not slimed in batter) you're good - a couple of crumbs is fine.8) Immediately and carefully remove the muffins from the pan and place them on a cooling rack.Serving Size:?Makes 15 regular size muffins
