Preheat oven to 400 deg. F. and line (or oil) muffin tin. Mix dry ingredients in medium mixing bowl till well incorporated. (If using column B optional ingredients, add to this mixture and stir to coat well). Whisk wet ingredients together till well blended, then pour into dry ingredients. Stir till just moistened (lumps are OK--if you over-stir you'll end up with little hockey pucks instead of muffins, so err on the side of under-mixing if you're not sure!). Spoon batter evenly into 12 muffin cups and bake for 15-20 minutes, till tops are browned and muffins spring back if pressed lightly. Cool in pan for a few minutes, then finish cooling on wire racks.
