Here is how you make Confetti muffins:

Shred zucchini and put in colander, sprinkle with salt. Let this sit for 10 minutes or so. Meanwhile, mix eggs, applesauce and yogurt. Shred carrots, peel and shred parsnip. Squeeze juice out of zucchini that has been sitting, and combine with carrots and parsnips. Mix flour, soda and baking powder, then sprinkle over vegetables, mixing thoroughly. Add floured vegetables to wet mixture, stir to combine, then spoon into muffin cups. This can make up to 32 smaller muffin or 24 larger ones. Bake at 350 for 15 - 20 minutes.
