In another bowl, beat egg whites, egg, applesauce, oragne juice, oil and vanilla. Stir into dry ingredients just until moistened. Fold in carrot, pecans, coconut, raisins and apple.Use foil liners or grease muffin cups. Fill 3/4 full. Bake at 350 for 15-18 minutes or until toothpick comes out clean.
