1 Cup Water

1 Egg

1-1/4 Cups Uncle Sam Original Cereal

1/3 Cup Raisins

1 Cup Whole Wheat Flour

3/4 Teaspoon Ground Cinnamon

1 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda

1/4 Teaspoon Salt

1/3 Cup Honey

1/4 Cup Unsweetened Applesauce

2 Tablespoons Oil or coconut oil



Preheat your oven to 400?F, and grease 12 muffin tins



In a large bowl, whisk together the water, egg, cereal, and raisins. Set those aside to soak while you measure out your dry ingredients.



In a separate bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt.



Returning to the cereal bowl, stir in the honey, applesauce and oil. Fold or gently stir in the flour mixture, until everything is just combined. No need to overmix here.



Pour the batter evenly into the 12 muffin cups. They will be rather full. Bake the muffins for 15 to 20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
