1 cup All Purpose Flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder

Makes 12 large muffins Combine the orange zest and orange extract, and let rest, covered until ready to blend into the batter. Combine the cereal, applesauce, raisins, brown sugar, buttermilk and cinnamon. Let the ingredients soak together for a while (half an hour?) then stir in the orange extract, orange zest, and the egg. Blend the flour, baking soda and baking powder together, then fold into the wet ingredients. Grease your muffin tins with a mixture of flour and oil (Baker's Joy is fine too)Use a 1/4 cup measure to divide the batter into the tins, and bake at 350 for 20 minutes.
