Spray 12 cup muffin tin and preheat oven to 350 (175C)Sift flour, baking soda, salt, cinnamon, splenda and sugar together in a bowl. Add oats and mix thoroughly.In a separate, small bowl add applesauce, egg whites. In ? cup measuring cup, first squirt a small amount of lemon juice and then ? tsp. vanilla and fill remainder of ? cup measuring cup with water. Add water mixture to egg whites and applesauce and mix thoroughly. Add wet mixture to dry ingredients and , mix until just blended. Do not overbeat. Fold in blueberries. And use an ice cream scoop to fill muffin tin half way.
