Here is how you make Fruit N' Nut Muffins:

In a large bowl, comgine first seven ingredients. Make a well in the center and set aside. In another bowl, combine bran and milk. Let sit for 5 minutes. Meanwhile, combine cranberries and dates in a small bowl. Add 1/2 cup boiling water. Let sit for 5 mintues. Drain excess water off. Add to the bran mixture. Add egg, oil, applesauce, banana, apple, and carrot. Mix well. Add to flour mixture and stir just until combined. Fill paper lined or greased muffin tins until completely full.
