1 1/2 cup Spelt grain (if using flour = about 2 3/4 c)

2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon

Here is how you make Good Morning Blender Muffins:

1) Preheat oven (350 degrees) and (in small little dish or cup) mix up crystalline fructose sugar and cinnamon. This will be sprinkled on top of muffins before putting in oven. 2) Add to blender in this order:3/4 cup yogurt (plain) 2 eggs1/3 cup honey2 Tblsp Extra Virgin Olive Oil1 1/2 cup Spelt grain (if using flour, spelt flour=2 3/4 cup)Blend the above items in the blender for 3-5 minutes.3) Mix the leavening mix while the blender is going. In a small cup combine:2 tsp. baking power3/4 tsp baking soda1/2 tsp salt1 tsp cinnamon4) Fill muffin cups quite full and sprinkle tops of muffins with cinnamon-sugar topping. (If any empty muffin cups, fill 1/2 with water.) 5) Bake for 10-12 minutes.6) Cool muffins 5-10 minutes.
