3/4 cup All-Bran cereal
1 cup ground flaxseed meal
1 cup brown sugar
1 T. baking powder
1 t. baking soda
1/2 t. salt
2 eggs, beaten
1 cup buttermilk, lowfat
1/4 cup coconut oil (melted)
1/4 cup unsweetened applesauce
2 bananas (ripe and mashed)
1 cup walnuts, chopped (optional)

Here is how you make Good Morning Muffins:

Combine buttermilk and All-Bran cereal and let set while you prepare other ingredients. Stir together all other dry ingredients. Add all other ingredients, including buttermilk with All Bran. Stir until mixed well but don't beat. Bake 18-20 minutes at 375 degrees in muffin pans sprayed with non-stick cooking spray (Pam or whatever).After completely cooling, I store them in a zip-loc bag in the frig until ready to eat - pop them in the microwave for 10 seconds or so.
