Here is how you make Sophie's Morning Glory Muffins:

Preheat oven to 350 F. Mix together all dry ingredients (Flours, wheat germ, flaxseed, baking soda & powder, brown sugar, white sugar, spices). Hand mix in coconut, raisins, cranberries and dried fuits.Add shredded carrots, shredded apples, crushed pineapple and nuts of your choice.In a separate bowl, whisk together eggs, oil, applesauce, pumpkin, vanilla. Add mixture to large bowl with all your other ingredients.Spoon into muffin tins (lined or not). Will make 36-40 large muffins (bake 30-35 min) or 96 mini muffins (Bake 15 min).
