Here is how you make Baked Oatmeal to Go Muffins:

Preheat oven to 350. Mix eggs, vanilla, applesauce, banana, and honey together. Add oats, flax, cinnamon, baking powder, salt and mix well with wet ingredients. Pour in milk and combine. Spray or line 24 muffin cups. At this point you can top your muffins with any fruit you'd like...blueberries, dried cranberries, etc. Bake for 30 minutes or until toothpick comes out clean.
