Grated zest of lemon and/or orange equal to one fruit
Orange juice concentrate thawed 1 tbsp.
Buckwheat flour 1/4 cup
Amaranth flour 3/4 cup
Stevia or Truvia sugar substitute equal to 8 tablespoons sugar
Baking soda 1/4 tsp.
Baking powder 1 and 1/2 tsp
Salt 1/4 tsp.
Walnuts chopped and toasted (to taste)
Pecans chopped and toasted (to taste)
Granulated sugar/nutmeg mixture topping
before baking to taste

Here is how you make DAY 4: Nutty Nutmeg Orange/Lemon Pumpkin Muffins:

1. Mix wet ingredients: vegetable oil,rice milk. Whisk together.2.Add flavorings: nutmeg, grated zest of orange and or lemon, cooked and cooled and pureed pumpkin, defrosted orange juice concentrate. Stir well.3.Combine dry ingredients: buckwheat and either rice or amaranth flour, baking powder, baking soda, salt.4. Stir the dry ingredients into the wet ingredients briefly just until incorporated.5. Add stir ins: chopped walnuts and/or pecans.6. Spoon into Pam sprayed paper mugging cups. Sprinkle with a little granulated sugar and nutmeg to taste.7. Bake: 375 degrees until toothpick comes out dry or with just a few moist crumbs. Typically 15-25 minutes for muffins. Longer for loaves.
