What Are The Ingredients For Oat Pumpkin Muffins Recipe?

The ingredients for Oat Pumpkin Muffins are:

1 cup plus 1 T. old fashioned oats, divided
1/2 cup whole wheat flour
1/2 cup unbleached white flour
1 tsp. baking soda
1 tsp baking powder
1/2 teaspoon cinnamon or pumpkin pie spice
1/2 tsp salt
1/2 cup butter, softened
1 cup brown sugar or white sugar
2 eggs
1 cup pumpkin
1 tsp vanilla
1/2 cup plain greek style yogurt
flax meal to sprinkle tops

Preheat oven to 350. Grease 12 muffin cups or line with paper liners. In a blender or food processor, place 1 cup old fashioned oats. Process until oats are finely ground. In a large bowl combine 1 cup ground oats, flour, 1 T old fashioned oats, baking soda, baking powder, cinnamon and salt. In a seperate large bowl cream together the butter and the sugar. Add eggs, one at a time, beating well after each addition. Stir in pumpkin, vanilla and yogurt. Fold in oats mixture and mix until fully blended. Pour batter into prepared muffin cups. Sprinkle with flax meal and bake for 25 - 30 minutes, or until toothpick inserted in center of muffinscomes out clean.

Note: this recipe uses half of a 15 oz can of pumpkin, so doubling it will insure that you use it all up!;) Oats, pumpkin and yogurt are super foods! Add 1/2 cup chopped walnuts and you have 4 super foods in this recipe!
