1 cup Mesclin,Mixed greens, Baby Spring Mix (salad with spinach, etc.)

Here is how you make Abby Healthy Blueberry Spinach Muffins:

--Mix Smart Balance (1/2 C or 8 T) and the cream cheese in a bowl until creamy. Add eggs and vanilla. This is where you would add sugar if using it.--Add 2 C flour, baking soda and baking powder and salt. Mix. Stir in blueberries and chopped spinach. (She didn't thaw them). Lightly mix in the silk (or milk if you choose), but don't over stir mixture.--Mix CRUMB TOPPING which is the last 1/4 C flour, cinnamon and 1/2 c Smart balance.--Spoon into sprayed muffin tins.
