1 cup of "buttermilk" (1 tablespoon lemon juice with 15 tablespoons of unsweetened soy milk)
2 cups Whole Wheat Flour
1 cup Bran (I used Bob's Red Mill Wheat Bran)
1/2 cup Ground Flax Seeds (I buy the flax seeds whole and grind in my coffee grinder- cheaper & fresher)
1/2 cup Sugar
2 teaspoons Baking Soda
1 teaspoon Baking Powder
Dash of Salt
1/2 cup Carrots, grated
1/2 cup Walnuts, chopped
1/2 cup Raisins
1/2 cup Applesauce
1/4 to 1/2 cup Molasses (depending on your taste buds)
2 teaspoons Vanilla

Here is how you make Super Moist Vegan Bran Muffins!:

Preheat the oven to 350 degrees. First, make the "buttermilk"- the easiest way is to put 1 tablespoon of lemon juice or vinegar in a 1-cup measuring cup, and fill the rest with unsweetened soymilk. Let it sit for 5 - 10 minutes while you get the rest together.Next, put all the dry ingredients together & mix them in a large bowl (flour, bran, flax, baking soda, baking powder, sugar and salt).In a smaller bowl, mix the molasses, applesauce, vanilla & molasses together- add to the dry. After mixing thoroughly, fold in the walnuts, raisins & carrots.Pour them into a lined or greased muffin tin. Cook them for 15 minutes. Viola!Makes 2 dozen!
