Here is how you make Vegan Muffins:

-Preheat oven to 350 F-Combine almond milk and vinegar and allow to curdle for about 5 minutes. -In a large bowl, combine dry ingredients.-Add applesauce, canola oil, and vanilla extract to milk and vinegar mixture and stir.-Gently combine wet and dry ingredients, taking care not to over-mix.-Fold in any extras, such as berries or chocolate chips. (If using frozen berries, keep them frozen until you add them to the recipe.)-Pour mixture into a muffin pan (whether you use paper muffin cups or not depends on whether or not you have a non-stick muffin pan.)-Bake for about 25 minutes.
