The recipe suggested those as well as spinach, pears, pineapple, and raisins for choices. Also, the recipe called for 1/2 c. white flour, 1/2 c. whole-wheat flour, 1 Tbsp. soy flour, 2 Tbsp. wheat germ, 1/2 c. old fashioned oats (or bran flakes, or a combination of the two), and 1/4 c. ground flax seeds. The recipe also called for whole milk. You would need to recalculate the nutritional value if you use the above ingredients.

3/4 c. grated or finely chopped fresh or dried fruit (apple)
2 Tbsp. raw sugar, for topping

Preheat the oven to 350 egrees. Line a 12 muffin pan (or 24 mini) with paper liners or mist with cooking spray.Whisk the flours, wheat germ, oatmeal, baking soda, baking powder, cinnamon and salt in a large bowl; set aside. Beat the egg and brown sugar in a medium bowl with a wooden spoon until smooth. Add the olive oil, vanilla, milk, vegetables and fruit and mix well. Pour the wet ingredients into the dry mixture and stir just until blended.Spoon the batter into the prepared pan, filling each cup about 3/4 of the way. Sprinkle the tops with the raw sugar.
