I've made these muffins plenty of times and I can tell you, it's delicious!My father likes this recipe as is.... i'm a plain Jane, so I omit the raisins, nuts, and coconut so it's basically just a banana/carrot muffin, but just as good! You can eat this as breakfast (as I do) or a snack. You can toast it and put some cream cheese on it if you decide to make bread instead of muffins. YUMMY!!!! These muffins my look small, but they definately fill you up, it's a great, quick and easy breakfast option if you have no time to cook in the morning.

Raisins 1/4cup
Pecans or any nut of your choice 1/4cup
Baking Soda, 1/2 teaspoon
Baking Powder,1/2 teasppon
Applesauce (any kind you like) 3/4cup
Shredded unsweetened coconut, 1/4cup
Brown Sugar, 1/2 cup, packed
white Sugar, 1/2 cup
2 medium eggs
Vanilla Extract, 1/2 teaspoon
Salt just a dash

Here is how you make Lil' Bit of everything Muffins:

Prehead oven to 350 degreesCombine the dark and white sugars together, add in the applesauce (it's actually 3/4 cup of applesauce just in case you were confused by the decimal, they wouldn't let me put fractions!) Stir until well blended. Crack open the eggs in a separate bowl and whisk them lightly before applying them into the mixture. After combining the sugars, applesauce and eggs add in the baking soda/powder, nutmeg, cinnamon, vanilla extract, a SMALL dash of salt and mix together. Add in the flour a little at a time so it can disolve into the mixture and it will be easier to stir in small sizes of flour rather than the enitire 2 cups at once! After you have done this throw in your mashed bananas, carrots, coconuts, raisins, and any nuts of your choice and stir, stir stir!Put in a 12 count muffin pan and bake for 30-40mins or until a knife or toothpick inserted in the muffins comes out clean!You can also make this into a bread, just use a loaf pan instead of a muffin pan and bake for 50-70mins or until knife or toothpick inserted in the bread comes out cleanNumber of Servings: 12Recipe submitted by SparkPeople user NICKY791.
