Here is how you make Maple Carrot Zucchini Muffins:

Mix together flour and oatmeal. Combine the eggs, yogurt, almond milk and maple syrup in a large measuring cup, and stir until well combined. Pour over flour and oatmeal and mix well. Let sit on counter for 15 minutes so oatmeal and flour will soften. Stir in carrots, or whatever vegetables you are using. Add melted butter, cinnamon, nutmeg, soda, baking powder, and cocoa. Use muffin/ice cream scoop to fill muffin cups.
