Mix together the seeds and the olive oil. Toss well to coat and place on a cookie sheet or tray and toast in a 350 degree oven until lightly toasted (about 5-8 minutes). Watch carefully as they can burn quickly. Remove from oven and set aside to cool. When cool toss in the toasted coconut. I toasted the coconut separately. Just sprinkle the dry coconut on a sheet (don't toss in oil) and toast until golden in same 350 degree oven.Place dates and cooled seeds and toasted coconut in the bowl of a food processor.
