1 C brown sugar, packed (or dark brown)
.5 C white sugar
1 C salted butter, softened
2 Tbsp. honey
2 tsp. pure vanilla extract
2 large eggs
1.5 C raisins (8 oz)
.5 C walnuts (2 oz), chopped (optional)

Here is how you make Oatmeal Raisin Chews:

Preheat oven to 300In Medium bowl combine flour, soda, salt and oats. Mix well with wire whisk and set aside.In a large bowl blend sugars with electric mixer set at medium speed. Add butter and mix to form grainy paste. Scrape sides of bowl, then add honey, vanilla and eggs. Mix at medium speed until fully combined.Add the flour mixture, raisins and walnuts, and blend at low speed just until combined. Do not overmix.Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart. Bake for 18-22 minutes or until cookies are light golden brown. Immediately transfer cookies with a spatula to a cool FLAT surface.Makes 2.5 dozen without walnuts, 3 dozen with.
