This low-fat, low-carb recipe can be either fixed in a microwave-safe mug or in one cup of an electric pie/cake maker appliance (Cook's Essential Pie/Cake Maker, as an example). It is a wonderful breakfast or snack. I used previously cooked fat-free hashbrowns ( a potato shredded & cooked in my waffle iron) & part of the leftover bacon from a previous breakfast to fix this recipe.

1/4 wedge of Laughing Cow Light Cream Cheese (cut in tiny pieces)
1/4 tsp Mrs. Dash (R) Original Blend
1 dash black Pepper
1 dash red pepper (optional)

Here is how you make One-serving Omelette:

I made this in my pie/cupcake maker, so I quadrupled the recipe to fill 4 cupcake molds. I preheated the machine, mixed all ingredients in a separate bowl and then put 1/4 cup of ingredients in each of 4 cupcake molds (there was a little left over). I let them cook in machine about 5 to 7 minutes until golden brown & toothpick inserted in the center of each one came out clean.If making in the microwave, spray microwave-safe mug with non-stick cooking spray, mix all ingredients & pour into mug. Microwave on high for 1 or 2 minutes (depending on your microwave). After the first minute, check to see if done by inserting toothpick in center about every 15 seconds.
