1. Place the chickpeas and water in a crock pot. Cook on low for 3 hours, or until tender. Place the chickpeas and cooking liquid in a blender or food processor and blend to make a smooth paste. Add more liquid if needed. 2. While the chickpeas are cooking heat 2 tablespoons of oil, saut? onions until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown. 3. Add the onions, lemon juice, tahini, garlic, salt, pepper and remaining oil to the bean mixture.
