* 1 T sweetener (I use Stevia because sugar alcohols and artificial sweeteners are evil - if you use Stevia, you don't need as much sweetener because it's POWERFUL stuff!)

Mix ingredients together and cook as you would other pancakes. I like to use a nonstick pan with a little olive oil.Makes six pancakes (10cm in diametre)Nutritional Information: Each pancake has 1 gram effective carbohydrate, plus 2 grams of fiber, 6 grams of protein, and 155 calories. (Spark calculates things a little differently since they don't have almond meal listed, so I selected ground almonds, which are slightly higher in carbs and fat).You can use any toppings you want (keeping carbs in mind, of course) - mine tasted great with a sprinkling of sweetener and a tiny splash of lemon juice.
