In a separate bowl, combine crumbs, parmesan, and seasonings. Dip the brie round in egg mixture then coat with crumb mixture. Repeat until round is well coated. Heat olive oil on medium heat in a small skillet. Fry brie round for 2 minutes on each side. Serve with triscuits or other tolerated crackers.**I have made this recipe a few times. The first time, I used a knife to cut/scrape off the soft rind of the brie. The other two times I did not. I found that while the taste was not really affected, the cheese itself stayed cold when I did not cut the rind off, where it get very warm and melty when I did.
