Put olive oil in nonstick pan and grill red pepper until soft, fragrant, and a little blackened (10 minutes). Set aside.Put following ingredients into food processor~2 cans chickpeas (DRAINED), garlic, lemon juice.Blend 2-5minutes, until no large chickpeas are visibleadd Tahini, salt, cayenne pepper, waterblend another minute or 2 until smooth and creamy, consistancy of peanut butter. add more water if desired. Toss in red peppers and green onions and blend another minute or so.Transfer to bowl. Cover and refrigerate for at least 1 hour.Drizzle with extra, virgin, olive oil before serving with pita chips, assorted veggies, or sliced whole grain pita bread!
