1/4 cup honey
1/2 cup strawberries (pureed)
3 cups sliced strawberries

Here is how you make Strawberry Pie with Almond Flour Crust:

Crust directions:Preheat oven to 350 F. Combine crust ingredients and press into a 9" pie pan, and bake for 8 - 10 minutes or until lightly browned. Remove from oven and let cool on a rack.Strawberry Filling:In a medium bowl, combine 1/2 cup cold water with the tablespoon of gelatin. and stir to mix. After a couple minutes, add the 1/2 cup boiling water and the 1/4 cup honey. Then add the pureed strawberries and the 3/4 cup cold water (you can include a few ice cubes as part of the 3/4 cup cold water), and stir to mix well - and if you used ice, stir until the ice is melted. Put bowl of gelatin into the fridge let it start to set-up. Once cooled and slightly thickened, stir in the sliced strawberries. Return to the fridge to thicken a bit more, until it is soft set. (Check consistency every half hour or so.) Spoon into the baked almond pie crust, and return to the fridge to set up completely.Serve as is or add whatever creamy topping you wish.
