1 cup corn syrup (white)

Here is how you make Christmas Popcorn:

Make popcorn so you have about 50 cups popped. Put in two large buttered bowls and set aside. Add nuts to the popcorn in each bowl.In large sauce pan with plenty of room to bubble up in, place butter, sugar and corn syrup. Cook with candy thermomater to 300 degrees (hard crack). This takes a long time, and gets a dark golden caramel color. Remove from heat and carefully add vanilla. (Will bubble up, use caution) Pour half over each bowl. It helps if you have someone else to stir one of the bowls, while you do the other. Stir to try and incorporate the caramel onto the popcorn and nuts. Then put out on large buttered trays, and kind of pull it apart as needed. When cool store in air tight cans. This will last a couple of weeks if your friends don't eat it all faster than that.
