Preheat oven to 350.Wash and peel sweet potato. Grate using a box grater. Use kitchen towel to wring as much moisture out of the potato as possible.Keep craisins, almonds and sweet potato separate.Mix dry ingredients in large bowl.Mix wet ingredients in separate smaller bowl.Add wet ingredients to dry and mix. It will be very dry but dont worry! The sweet potato will add all the moisture you need. Add the craisins, almonds and sweet potatoes and combine thoroughly.
