Mix in the honey until well combined. Add the rest of the ingredients (except the choc. chips and flax meal). Stir until well combined (make sure to get the bottom of the bowl). Press mixture firmly into 9" x 13" foil-lined pan. Bake 15 minutes. Remove from oven; sprinkle w/ choc. chips. Return to oven until chocolate is softened (2-3 minutes). Spread chocolate evenly over bars, then sprinkle with flax meal. Cool slightly. Refrigerate until firm (about 2 hours). Cut into bars.
