The ingredients for Party Favorite Roasted Corn Dip are:

3 cups Yellow Sweet Corn (Frozen, Fresh, or Canned no salt)
3/4 cup Onion, chopped
3/4 cup Red Bell Pepper, chopped
3/4 cup Green Pepper, chopped
1/2 cup Scallions (green onions), chopped
2 cloves Garlic, minced
2-3 tbsp Hellman's Real Mayonnaise
1 cup Finely Shredded Sharp Cheddar
1 small Chipotle Pepper in Adobo + 1 tsp Adobo sauce (about 2 tbsp total), mashed into a paste
1 tsp Cayenne Pepper
1 tsp fresh ground Black Pepper
1 small Jalapeno Peppers, minced (optional)
2 tsp canola oil

**chipotles can be powerful but they aren't all the same size in the can. it is advised to prepare the paste and then add in half of the amount, taste the dish and then add more if desired.

How Do I Make Party Favorite Roasted Corn Dip?

Here is how you make Party Favorite Roasted Corn Dip:

Prep and chop all your ingredients before beginning.Select a large pan with a flat bottom to spread the corn eavenly with 1 tsp canola oil and over med-low heat cook the corn until it is carmelized and a faint golden brown. Do not turn the heat to high or they will burn. It is best to do the corn in two batches (or more if you have a small pan). You can also roast the whole batch on a baking sheet in the oven if desired. Set aside.Using the same pan add in the remaining tsp of oil and saute the onions, red and green peppers, garlic, jalapeno (if using) and scallions (reserve a few of the green parts for garnish). Saute until just soft (4-5 minutes). Add the cheese (reserve 1/8 cup for garnish), mayo, chipotle, black pepper, and cayenne pepper. Cook another minute until cheese is melted and everything is well blended. Tranfer all to a small casserole dish and pack down. Garnish with the remaining cheese on top. Bake in a 375 degree oven until bubbly (about 15 minutes depending on the oven so keep an eye on it). Garnish with the remaining scallions. Serve as a side dish or dip with chips or get a big spoon and eat it as a main dish.If you do not want this dish spicy then reduce or eliminate one or all of the following: cayenne, jalapeno, and chipotle.
