Here is how you make Roasted Corn and Pepper Guacamole:

Preheat oven to 425 degrees. Place Corn, peppers, chili powder, oil and salt on a foil lined baking sheet, tossing to mix well. Roast in 425 degree oven for 20 minutes, stirring half way through cooking. Allow to cool slightly. Meanwhile, in a medium bowl, mash avocado. Stir in mayo, Tabasco, lime juice and cilantro. Mix in Roasted mixture and cover tightly. Refrigerate for 1-2 hours. Serving Size:?Makes 8 (2 Tbsp) Servings
