Here is how you make Beth's Sushi rolls:

Steam the cauliflower with a few tablespoons of water for about 5 minutes. Add gelatin and cider vinegar. Let cool.Place sheet of nori on work surface first. place "rice" on sheet going about half way up. Add carrot and about 8 of the cucumber slices. Add a few pieces of the smoked salmon and roll.
