Remove Spinach from freezer and place on counter before beginning the other ingr. Turn bag over several times while thawing. That's so it will thaw evenly.Preheat oven to 350 deg.Prepare a 9x13 inch baking pan with pan spray.Saute' onions in 1 teasp. bacon grease. Allow to cool. Mix wet ingr. together in large bowl. Add dry ingredients to the wet ingredients.When the onions are cool enough to not curdle the eggs, add them in. Mix all well. Lightly press into baking dish. Bake in preheated oven on center rack for 50 - 55 min. You should get a nice brown edge. Allow to cool on rack for an hour. Cut, serve, or freeze for future use.You may adjust seasonings.
