a recipe from Oh She Glows. Meant to be vegan, but I only had regular butter on hand. She made her own jam and I know it had less sugar than even a low sugar jam would, but I did not have fresh strawberries on hand either. I used my own low sugar jam for this, but I bet the fresh would be awesome!

1.5 cup regular oats
1 cup kamut or spelt flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar
1 chia egg (1tbsp chia seeds mixed with 4 tbsp warm
water)
1/2 cup butter or heart healthy margarine- melted
1/4 cup maple syrup
2 tbsp almond milk
1 cup low sugar jam (or make your own)
optional- extra oats and unsweet coconut


How Do I Make Strawberry Oat Squares?

Here is how you make Strawberry Oat Squares:

if making jam- place 2.25 cups chopped strawberries and 3-4 tbsp sugar in sauce pot. Heat on low until berries sweat and get watery. Add 1 tbsp chia seeds and stir well. Bring to boil and then simmer over med-low heat 10 minutes. Remove from heat and cool 5-10 min. Preheat oven to 350. Line a square pan (9x9 for me) with parchment and oil sidesFor bars: mix chia seeds and water and set aside.mix oats, flour, sugar, soda and salt in large bowl.In separate bowl add melted butter, maple syrup, milk and chia "egg", stir well. Add wet to dry, mix well.Pour mix into pan and spread it out evenly.Spread jam on top. Optional- sprinkle top with another 1/4 cup oats and a little brown sugar. I also sprinkled on a bit of unsweetened coconut shreds.Bake 30 minutes.
