1/4 cup part skim mozzarella cheese, shredded
1 Tablespoon Parmesan, shredded

Here is how you make Mini Stuffed Peppers:

1. Preheat oven to 350 degrees. Lightly spray a baking sheet with cooking spray and place halved peppers in a single layer. Lightly sprinkle with salt and bake 10 minutes.2. Saute onion until golden, about 4 - 5 minutes. Add sausage and cook until warmed, about 3 minutes. Set aside to cool. 3. Combine cooled mixture with ricotta cheese, oregano, basil and mozzarella cheese and mix well. Spoon mixture into a quart sized Ziploc bag. Seal baggie and snip off one corner to form a piping bag.4. Pipe cheese mixture into cooled mini peppers. Sprinkle with Parmesan cheese. Return to oven for 30-35 minutes or until cheese is slightly golden.Serving Size:?Makes 24 peppers
