Taste and adjust spices as needed.Turn off heat and stir in 3/4 cup of each of the cheeses, reserving 1/4 cup of each cheese.Pour the sauce into a large casserole (or other oven-safe) dish, then sprinkle reserved 1/4 cup cheeses over the top. Bake covered until for 15 minutes, or until the cheese on top has melted and the whole dish is bubbly.Serve with tortilla chips and enjoy! For extra zing you can try adding jalapeno peppers or canned chili peppers in addition to the other peppers used.Makes 12, 1/3 cup servings.
