8 Large Egg Whites
1/4 Tsp Baking Powder
1/2 Cup Water
Coconut Oil for cooking - About 6 Tsp


How Do I Make Primal Chips - Tortilla?

Here is how you make Primal Chips - Tortilla:

Whisk all ingredients together in a bowl, making sure no lumps remain. If you have a stick blender, use it. It works great for making the batter super smooth. It'll be pretty thin so don't let that throw you. Preheat a medium nonstick skillet over medium heat (I use a 10"). Place about 1 tsp coconut oil in the pan. Swirl around to coat.Pour about 1/3 cup of the batter into the pan, tipping the pan from side to side while you pour in the batter (to get a thin tortilla). If there are any large holes or gaps in the batter, just put a bit more batter to fill it. It may take a few attempts to get the hang of it, but once you do, easy as pie. Do not attempt to flip the tortilla until you are sure the first side is golden brown. Otherwise, the tortilla will rip.Once nice and golden, flip over and brown on opposite side. Remove to plate, and repeat process (adding in some coconut oil, the batter, etc.). You should get 6 - 8 medium size tortillas.Once the tortillas are prepared, for Smaller Chips: slice them in half lengthwise and then 2 times in the opposite direction. You should end up with 6 "chips" from each tortilla, 4 triangular shapes and 2 rectangular. For Larger Chips: Slice each tortilla in half. Place all of the chips in your food dehydrator on about 140 - 160 and dry for several hours. I place them directly on the racks and then cover them with the removable sheets that came with the dehydrator. This seems to keep them from shrinking up as much. Check every now and then because some may get crispier faster than others. Remove the crispy ones and continue drying.If you don't have a dehydrator, you can use your oven but I haven't done them that way so I don't know how long it will take.The chips will shrink up some during drying, but they should still be a good size, similar to a regular tortilla chip. You'll end up with 6 Small Chips or 2 Large chips for each full size tortilla you made.You can make the tortillas and dry the chips up to 1 week ahead of time. Just put them in an airtight container and keep them in the fridge. Or you can make them and freeze them so that you always have some on hand. They freeze very well. When you're ready to use them, dry them for about a 1/2 hour or so in the dehydrator or for a few minutes at about 250 in the oven to crisp them back up.Play around with spices and things to make your own flavored tortilla chips.Serving Size:?Makes 36 Chips, 12 chips per serving
